Khao soi is from the north. Egg noodles in a coconut curry soup, a tangle of crispy fried noodles on top, and a little plate of pickled greens, shallots and lime on the side. Squeeze, stir, slurp.
My best friend Suni is from Chiang Mai and says nobody down south makes it properly. She is not wrong, but I still order it every rainy day.
